This is a little something I made for the office last week. It was goooooooooood. Try it folks. Simple, savory, delicious and great with chili.
Savory Cheddar Garlic Cornbread
You will need:
- 2 eggs
- 1 cup of all purpose
flour (gluten free sub with gluten free Bisquick)
- 1 cup of cornmeal
- 1 stick of salted butter
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- cup shredded cheddar
cheese
- 3-4 cloves fresh garlic
- ½ can of cream corn
- cooking spray
MMMMM Cornbread
- Begin by preheating your
oven to 375
- Now finely chop your
garlic cloves
- Next, melt the stick of
butter in the microwave in a mixing bowl
- Now beat the two eggs in
with the butter
- Add the rest of the
contents and whisk well (order doesn’t really matter) Just whist until there
are no clumps
- Now grease a loaf pan or
muffin pan, whichever you like
- Pour in your batter, and
bake for 30-40 minutes
- Check your dish at the
30 minute mark with a butter knife into the center. If it comes out clean, it is ready.
